Tim Schnars is the chief brewing officer and director of brewery operations at Meadowlark Brewing in Sidney, Mont. As a professional brewer, he has more than 11 years of brewing experience on opposite ends of the country, achieving industry accolades at the Great American Beer Festival and recognition in national publications. His chief passion in brewing is the pursuit of what he calls "crypto-gastronomy," or the cultivation of non-traditionally achieved flavors and aromas.
